East Meets West

Yesterday’s dinner was a fusion of East and West… And the end result was thoroughly satisfying cos it involved one of my favourite vegetables- chubby portobello mushrooms, and one of my favourite fish- salmon!

Ingredients
Vegetables (Part A)
8 medium portobello mushrooms
4 sausages, diced finely
2 slices cheddar cheese, chopped
2 tbsp parmesan cheese
1 egg
1 tsp concentrated chicken stock
Garlic salt
Pepper
Oregano leaves

Seafood (Part B)
1 large Salmon fillet
6 large scallops
Japanese Unagi Marinade
1 tbsp butter
Spring onions

Vegetables (Part A)
1) remove the stems from the mushrooms and chop them finely.
2) marinate the mushrooms with olive oil and a sprinkle of garlic salt. Set aside. (mine look a bit foamy cos I used olive oil in a spray can. Also, because I wanted some tomatoes, I marinated them with sugar and set them aside with my mushrooms.)
3) beat the egg with the chicken stock and a dash of pepper.
4) add the egg into the mixture of diced sausage, cheese and mushroom stalk. Mix well.
5) stuff the mushrooms with the mixture. (place a slice of cheese atop the marinated tomatoes)
6) sprinkle oregano leaves on the stuffed mushrooms and tomatoes
7) bake mushrooms at 200degC for 30min

Seafood (Part B)
1) marinate the salmon and scallop in Japanese Unagi Marinate 30min before cooking.
2) heat butter and add in salmon and scallop.
3) flip the seafood after 5min. Place onto serving plates when done.
4) bring remaining marinade to a boil and drizzle over the salmon.
5) chop spring onions and garnish dish. Done!
