Salted Fish Fried Rice with Assorted Meat and Long Beans
So here, I had a batch of one-day old rice (3 cups worth) because I decided not to cook dinner yesterday at the last minute since B offered to buy dinner home. So it was used instead for lunch today. Here are the ingredients:
1 can of luncheon meat, diced
1 piece of salted fish, diced finely
1 Chinese sausage, diced finely
80g long beans, chopped
1 onion, diced finely
2 large scallops, diced (I usually use prawns, but I ran out of them)
30g crabstick bits
2 eggs, sprinkled with pepper and a dash of chicken stock powder
Seasonings
1 tbsp fish sauce
1 tsp sugar
1) fry the salted fish. Set aside.
2) fry the chinese sausage. Set aside.
3) fry the onion till translucent.
4) add luncheon meat and beans.
5) add scallops, crabstick bits, followed by all the other ingredients, including the salted fish, chinese sausage and finally, white rice.
6) add in seasoning and toss thoroughly.
7) create a well in the middle of the fried rice and pour in the egg.
8) fold the rice mixture into the egg and toss thoroughly. Serve.
Fried rice tastes great with pickled green chilli!
