Sweet and Sour Pork

In my eagerness to cook this, I forgot to take most of the process pictures. So you will have to imagine what went on. Hehe… Okok, I’ll update the post the next time I cook this, cos I definitely will!:)

Ingredients:
500g pork tenderloin, cubed
1/2 red capsicum, diced
1/2 green capsicum, diced
1 onion, diced
15 cubes canned pineapple (optional)
Spring onions, cut into 2″ slices
Chopped garlic
Oil for frying

Marinate:
1 tbsp chicken marinade
1 tbsp rice wine
1 teaspoon corn flour
pepper

Batter:
1/2 cup water
1/2 cup all-purpose flour
2 tbsp corn starch
1/2 teaspoon baking soda
1 egg white
1 teaspoon cooking oil
A dash of salt

Seasoning:
2 tablespoons tomato ketchup
1 teaspoon plum sauce
1 teaspoon white vinegar
1 teaspoon Worcestershire Sauce
1 teaspoon oyster sauce
1 teaspoon corn starch
1 teaspoon sugar
1/4 cup water

Method:
1) marinate the pork for a few hours before cooking.
2) prepare the seasoning and set aside.
3) Prepare the batter and heat oil in deep fryer.
4) coat the pork with batter and fry till golden brown. Drain and set aside.
5) heat oil in wok and fry the garlic, onions and capsicums till fragrant. Add in pineapple, spring onions and the seasoning. Bring to a boil and stir in the pork to coat it lightly. ( if you prefer the pork crispy, serve it separately from the sauce and drizzle the sauce over whenever you need it)
6) Serve hot with white rice.
