The Perfection of Pickled Green Chillies in an Old Reused Nescafe Glass Bottle
Every now and then, you discover a great recipe and tweak it till you get THE PERFECT recipe, customised just for your household. The perfect quantity of ingredients matched with the perfect measuring tools plus the perfect resulting taste (with ZERO LEFTOVERS!) that make the whole recipe a joy to repeat over and over and over again. This is one of those for my family.

The recipe is simple enough…
Ingredients:
- 10 medium green chillies
- 4 tablespoonfuls of sugar
- 180ml of rice vinegar
- 1/4 tsp salt
So I select 10 medium-sized green chillies around the thickness of my thumb, as long as the tip of my pinkie to the edge of my palm… Any thicker or longer, and there will be excess chilli spilling out of my good old NESCAFE glass bottle.
STEP 1: Slice the washed chillies

STEP 2: Rinse chilli slices in a colander to remove the seeds.
Yes, my colander is the perfect size too, for chilli seeds to pass through, and for no more, no less chillies…! (OK I did say this recipe has zero leftovers… But I’m wasn’t counting the dead chilli stems or the seeds..!:P)
STEP 3: Boil a pot of water

STEP 4: Soak chilli slices in boiling water for 20 seconds. Use leftover boiling water from the pot to sterilise the pickling bottle.

STEP 5: Measure out 180ml of rice vinegar and dissolve the sugar and salt in it. You can heat it up in the microwave at 30s intervals and stir the mixture to speed up the process.

STEP 6: Pour the mixture into the pickling bottle.

I love to reuse this NESCAFE bottle by the way, because it is squarish and stores easily in the fridge. Plus the golden cover is pretty!:)
