White Bait, Cheese and Tomato Omelette

This tasted scrumptious with plain porridge.:)

Ingredients
3 Eggs
1 tomato, diced
50g white bait
2 slices of cheddar cheese

Seasonings
Pepper
1/2 tsp concentrated chicken stock/ a little salt
1/2 tsp sugar

1) marinate tomatoes with sugar and white bait with some pepper.
2) stir-fry white bait and tomatoes
3) add chicken stock to eggs and beat. Pour over white bait and tomatoes.
4) add cheese. Flip omelette over when browned on one side.
5) garnish with chopped spring onions and coriander.

Done!
